    自制双皮奶

    今天用在网上找到的方法成功做成一碗双皮奶!概述流程如下:

    1. 准备两盒牛奶(一共大约490mL),放到锅里煮沸,同时加适量糖(依个人口味)。小心不要冒出来。
    2. 倒到一个碗里,倒之前不要关火,以防牛奶在锅里结皮。
    3. 把牛奶放一边晾着,然后再找一个碗,把两个鸡蛋的蛋清想办法弄到里面。稍微搅一搅,但不要气泡。
    4. 等那牛奶晾了七八分钟,结了一层皮,然后小心地把那牛奶倒到蛋清的碗里,并且要防止牛奶皮跟着一起倒进去或者破损。可以用筷子小心地挡住。要留少量的牛奶,否则奶皮会粘到碗底。
    5. 搅拌蛋清和牛奶的混合物,尽量均匀但也不要起泡。然后把它倒回到刚刚那个剩一层皮的碗中,注意沿着边缘倒,不要破坏那层皮。可以借助一个勺子。
    6. 盖上一层保鲜膜,蒸15~20分钟。保鲜膜的作用是防止水滴到碗里。
    7. 把火关掉,晾一阵,然后小心把锅盖打开,然后把保鲜膜撕掉。小心不要让保鲜膜沾到双皮奶,但是沾到一点也没关系。
    8. 换一张新的保鲜膜贴上,放冰箱里冻两个小时。然后就大功告成了。
